Our Story
Hi! We’re Obie and Michelle, and we’re glad you stopped by.
Insight Chocolate is, first and foremost, a labor of love. Five years ago neither of us would have imagined we’d be making our own chocolate, let alone encouraging other people to learn how to do it as well.
For almost 100 years, from the end of the 1800s until 1996, there wasn’t one new chocolate maker in the United States. Not one. There were countless new chocolatiers, chocolate shops and candy makers, but the actual process of turning unprocessed cocoa beans into chocolate was done by the same handful of large, industrial chocolate makers.
Most people are surprised to learn this because the common assumption is that all those places and people making chocolate candy and desserts must have also been making the chocolate. They weren’t. The truth was that all chocolate products were created using chocolate (couverture) that was made and sold by the ton from one of these industrial producers. Even ‘mom and pop’ chocolate and candy shops selling ‘homemade’ confections used this industrial chocolate.
For the last couple of decades this has been changing, and now a craft chocolate movement is transforming the industry, much the same way as the craft beer movement in the 80s and 90s transformed the beer industry. Not only have single-origin, craft chocolate makers sprung up all over the country and the world, individuals now have the resources and tools to make their very own bean to bar chocolate from home.
Insight Chocolate is here to bolster this movement and change, to help people learn about the wonderful world of craft chocolate and, if interested, even become craft chocolate makers themselves. Just like home and microbrewers changed the beer industry, it is our belief that home and small batch chocolate makers can transform the chocolate industry.
